Salmon, Avocado and Wakame Tartar
Good taste, good calorie count and a good Fitness diet would seem like an unsolvable equation. Nonetheless, you can solve it easily enough if you possess basic nutritional knowledge and the imagination of our chef Javier Morales, a passionate fan of both Fitness and cooking. He has kindly passed on this recipe, which is really low in carbs, but very high in nutritional value as it is high in protein and healthy fatty acids. I’m sure this very tasty recipe will become one of your favourites!
INGREDIENTS (FOR 4 PEOPLE)
- 2 salmon loins approx 200 gms each
- 50 gms shallot, very finely chopped (not grated)
- a handful of capers
- 4 very finely chopped pickles
- a pinch of grated ginger
- the juice of half a lime
- 1 tbsp mustard
- 1 tsp wasabi
- 2 tbsp soya sauce
- salt flakes
- a few drops of Worcestershire sauce
METHOD
- Skin the salmon, trying to clean it as thoroughly as possible of bones. Then, cut the loins into small pieces, but try not to chop them. Each bite of salmon should be pleasantly tingling to the palate.
- The proper way to prepare this dish is in a bowl inside another, larger bowl, which should contain ice and water, so as to ensure the ingredients stay fresh while we’re manipulating them. The pieces of salmon should be put into this smaller bowl, alongside the remaining ingredients as listed above, except for salt, ginger and lime juice.
- Mix the ingredients carefully while you add salt (not too much), lime and ginger to give it that extra special rock ’n’ roll touch that is bound to be a pleasant surprise.
- Prepare a lighter variant of the classic avocado guacamole, using only a little bit of onion and grated tomato, olive oil and lime juice. Place a full tablespoon of the guacamole alongside the salmon tartar.
- Finally, garnish the dish with wakame seaweed, which has been left soaking overnight. Seaweed is an ideal garnish, as it is very savoury and very low-calorie, while it contains important minerals, such as iodine. ENJOY!
