Seg\u00fan este informe, superamos el consumo recomendado de \u00e1cidos grasos en nuestra ingesta diaria de calor\u00edas.<\/p>\n<p>Si bien, la ingesta de grasas se relaciona casi siempre con el sobrepeso y tambi\u00e9n con la inflamaci\u00f3n, su consumo en las cantidades adecuadas, es esencial para la salud ya que, adem\u00e1s de ser una fuente de energ\u00eda y vitaminas liposolubles, la grasa tienen un papel fundamental en la composici\u00f3n y funcionalidad de las membranas celulares, participa en la formaci\u00f3n de hormonas y desempe\u00f1a un papel fundamental en la regulaci\u00f3n de las concentraciones de los l\u00edpidos sangu\u00edneos.<\/p>\n<p>Todo ello son conceptos fundamentales que quedan muchas ocultos bajo la \u201clucha contra la grasa corporal\u201d que los deportistas -y en especial los practicantes del Fitness y el Bodybuilding- realizan cada d\u00eda. La presi\u00f3n del espejo o de la tarima de competici\u00f3n, puede muchas veces m\u00e1s que nuestros conocimientos de salud y la ingesti\u00f3n de grasa es, no solo insuficiente, si no descompensada. M\u00e1s all\u00e1 de diferencias locales, las principales fuentes son los aceites vegetales (oliva y girasol, principalmente) y las grasas animales, aunque tambi\u00e9n encontramos grasas en cantidades significativas en los frutos secos, los cereales y los legumbres.<\/p>\n<p>En todos esos alimentos hay grasa pero son tan diferentes qu\u00edmicamente como diferentes son sus efectos sobre nuestra salud. Ayuda a reducir el colesterol malo y los triglic\u00e9ridos en sangre, aumentando el colesterol bueno e impidiendo la obstrucci\u00f3n de las arterias. Adem\u00e1s, reduce la hipertensi\u00f3n arterial y protege la membrana de los gl\u00f3bulos rojos.<\/p>\n<p>La fuente principal es el aceite de oliva, junto con las aceitunas y el aguacate, adem\u00e1s de algunos frutos secos como nueces o avellanas. Las grasas de origen animal tambi\u00e9n contienen omega 9, aunque es conveniente moderar su consumo puesto que suelen contener, adem\u00e1s, un gran porcentaje de grasas saturadas.<\/p>\n<p>Una vez conocidas nuestras grasas insaturadas, es muy importante mantener un equilibrio entre las tres, para el correcto funcionamiento de nuestro cuerpo. Ayudan a mantener saludable el pelo y la piel, permiten la absorci\u00f3n de las vitaminas liposolubles y mantienen nuestra temperatura.<\/p>\n<p>La mayor\u00eda de alimentos que las contienen son de origen animal, como la leche y sus derivados, las carnes de reses y aves o las yemas de huevo. Tambi\u00e9n, de origen vegetal como el chocolate, la margarina o el aceite de coco. Se recomienda limitar su ingesta a un m\u00e1ximo del 10 % de las calor\u00edas diarias. Estas grasas se forman en el procesamiento industrial de algunos alimentos, conocido como hidrogenaci\u00f3n, mediante el que cambian su configuraci\u00f3n y pasan de grasas insaturadas a grasas trans.<\/p>\n<p>Estudios cient\u00edficos avalan que los \u00e1cidos grasos trans procedentes de los aceites vegetales parcialmente hidrogenados incrementan el riesgo de padecer enfermedades coronarias y muerte s\u00fabita, adem\u00e1s de un mayor riesgo de que aparezcan componentes del s\u00edndrome metab\u00f3lico o diabetes.
